- 1 cube of firm tofu
- 1/4 daikon, carrot, burdock root
- 2 Leek The green part of the Japanese leek
- 2 pieces of ground ginger
- Soup
- 1000ml of water
- 4 tablespoons of miso
- 2 tablespoons sake, soy sauce, mirin
- 1 tablespoon of sugar
- 2 garlic cloves, chopped
- 1 finely chopped ginger
- 1 tablespoon sesame oil
Izakaya Classic Cooking Guide: Braised Waste
- Cut the radish root into long thin pieces and soak in vinegar. Cut the radish and carrot into thick slices.

- Cut the brandy into bite-sized pieces and boil for 3 minutes to remove the smell. Cut the tofu into bite-sized pieces.

- Cook beef offal with pieces of green leek and ground ginger. Cook for 10 minutes, remove the foam.

- After 10 minutes of boiling, rinse gently with ice water. Be careful not to drop the cream (if you don't like the cream, feel free to remove it).

- Mix the offal, carrot, radish and horseradish in a saucepan and bring to the boil. When the vegetables are soft, add the soup and tofu.

- Cook until the soup is reduced to 2/3 of the original volume, check the taste and adjust if necessary. If you let it cool before eating, the flavor will be absorbed and taste better.

- Garnish with leeks, chives and chilli and enjoy.

- Enjoy hot.
