- 1/4 th cup whole wheat flour
- Pinch salt
- Pinch sugar
- 1 cup refined oil
- 1/2 cup water approximately
Instructions to make to make Puri with chana dal
- Soak chana dal for an hour.Pressure cook dal with little salt,turmeric,1 cup water and 1 bay leaf upto 4-5 whistles.Set aside for pressure to release.Check whether dal is just cooked and not mushy.Heat mustard oil in a wok.Sprinkle cumin seeds,hing and 1 broken dry red chilli. When they start spluttering, add chopped coconut and fry golden brown.Add this to the dal.Also add scraped coconut and ginger paste.
- Mash little dal with a masher or back of a ladle. Add water and boil till the gravy is little thick.Sprinkle garam masala and ghee and serve hot with puris. Raisins may be added for garnishing.Bengali cholar (chana) dal is slightly sweet in taste.
- For Puri : Mix all purpose flour(maida) and wheat flour(atta).Sprinkle pinch of salt and 1 tbsp refined oil.Add water and knead to a stiff dough.
- Make small balls out of the dough.Roll out thin puris. Heat oil in a wok smoking hot.Fry puris till they puff up.Reduce flame if the oil is too hot.
