Ingredients and spices for making traditional spaghetti Bolognese sauce:

  1. Extra virgin olive oil 2 tablespoons
  2. 1/4 cup butter
  3. Celery 4 stalks finely chopped
  4. 3 carrots finely chopped
  5. 1 large onion, finely chopped
  6. 125g diced bacon or pancetta
  7. 4 cloves of garlic, very finely chopped
  8. 1 cup mushrooms, diced
  9. 1 salt
  10. 1 fresh chilli
  11. 1 kg of lean minced meat
  12. 1 glass of white cooking wine
  13. 1 1/2 cups milk
  14. 28 ounce can of tomatoes (with juice)
  15. Beef broth 1 cup
  16. Tomato paste 156 ml
  17. 1 (optional) Oregon basil, bay leaf

Instructions for preparing traditional Bolognese sauce for spaghetti

  1. Heat the butter and oil in a large saucepan (over medium heat).
  2. When the oil melts, add the onion, carrot, celery, garlic and a pinch of salt. Cook until tender, stirring frequently (about 5 minutes).
  3. Add chopped mushrooms and bacon/corn. Fry until the meat is brown (about 8 minutes).
  4. Reduce heat to medium/high and add beef 1/3 at a time! Stir and crumble the beef into the mixture. Add a little at a time, allowing the liquid to evaporate, which is needed to brown the meat (do not boil).
  5. Once all the meat is added, continue to cook until the meat is caramelized and beginning to crisp in places (4 to 6 minutes). Be careful not to burn the meat (you want to evaporate more liquid and caramelize the meat, which enhances the flavor).
  6. If you see bits of brown meat sticking to the pan, stir occasionally, reduce heat to medium and continue cooking for another 10 minutes to allow more liquid to evaporate.
  7. Turn the heat to medium and pour the white wine into the pot. Use a wooden spoon to scrape up any brown bits stuck to the bottom of the pan. Move all the meat around, making sure to scrape the bottom. When the wine is ready to evaporate (about 2-3 minutes) reduce the heat slightly and do not let the meat stick.
  8. Add milk, diced tomatoes with juice, beef stock, tomato paste, extra herbs, 1 teaspoon salt and a healthy dose of freshly ground black pepper.
  9. Bring to a boil, then reduce heat and cook, partially covered, about 4 hours, stirring occasionally. Trust me... it's worth it.
  10. If the sauce starts to stick after 4 hours, make sure it is on the lowest setting or add water. You want the sauce to reduce until it is thick and buttery, not watery. Taste the sauce and season with salt and pepper (I sometimes add parmesan as well) until you get the desired flavor. Remove from oven and enjoy!
