  8. 1 1/2 cups white rice minute
  9. 1 1/2 cups of water
  10. 2 tablespoons of tomato chicken broth
  11. 1 tablespoon of tomato paste
  12. 1/2 teaspoon of ground black pepper
  13. 1 cup of any type of grated cheese. I used Monterey Jack, but the cheddar is great too
  14. 4 large green peppers, halved and cleaned

Steps for making stuffed green peppers

  1. In a large microwave-safe bowl, add the rice, hot water, broth, tomato paste, and pepper. Make sure the pasta is well incorporated into the rice mixture. If your water is hot, you can dissolve the sauce and pasta before adding the rice. After mixing, place in the microwave with a small lid, but not with the lid closed, and cook in the microwave for about 5 minutes. Let the rice sit for another 5 minutes or until the liquid has dissolved and the rice is tender.
  2. Keep the rice mixture, covered, to keep it warm and in a large pot, add about a tablespoon of olive oil and start cooking with the onion, garlic, carrot, chilli and courgettes. Cook over medium heat until the vegetables are soft but not overcooked. You want it to hold its shape as you add all the ingredients. Remove from the pan and set aside.
  3. In the same pan, start cooking the meat until it is golden brown. About 5 minutes. Drain all the fat from the meat with a spoon. Adjust the temperature to medium and add the cooked vegetables and tomato sauce. Add all the ingredients and cook over low heat for another 5 minutes.
  4. Turn off the heat and let the mixture cool. Take the green peppers, cut them in half so that they form small cups and stand alone in the pan. Remove all the pulp, stem and seeds. Use a large baking sheet and cover the entire bottom with aluminum foil to remove the messy wax. Place all the pepper halves about 1/2 inch from the bottom
  5. Preheat the oven to 375 ° F
  6. Take the mixture of meat and vegetables and mix it with the rice in a large bowl. Fold the ingredients so the rice doesn't ferment or the vegetables don't break. This is the spice phase. Adjust the flavor to your taste, adding more salt or herbs if desired. When everything is well blended, start filling the halves of the pepper by pouring the rice / meat mixture until it is completely covered. You can have an extra dressing, which is always nice on its own. :)
  7. When all the pieces of peppers are cooked, place the grated cheese on top. Cover the entire pan and the peppers with foil, being careful not to touch the top of the peppers. Make sure there is a steam vent at the top. Put in the oven and cook for about 30 minutes. In the last 5 minutes, remove the aluminum foil and brown the cheese.
  8. I serve them alone with a pinch of Parmesan. You can change the recipe and add the mushrooms if you like or replace the white rice with brown rice. I made a low carb version with no rice and used 3 pounds of ground beef and 1 pound of lean sausage instead. The possibilities are limitless. I hope you like it!
