- Heat a large skillet with olive oil. Brush the pork in the hot oil, taking special care to brown the fat and sauté the sides and bottom for about 5 minutes.
- Preheat oven to 500°F. Prepare a casserole sprinkled with non-stick bags and large enough to hold pastries. Brush the lard over the pork with a sharp knife, without cutting through the meat.

Let stand warm for at least 10 minutes before slicing. Remember that it's good if the pork is a little pink.
- Meanwhile, prepare the sauce. Heat a baking dish with 2 tbsp pork, add flour until combined. Cook over low heat for 2 minutes.
