- 1 liter chilli powder
- 2 pounds lean beef
- 1 pound ground Italian sausage
- 6 oz can of tomato paste
- 28 ounces of tomato puree
- Two glasses of red wine
- Two tablespoons of the best broth - beef
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 2 whole bay leaves
- Cream cheese mix
- 32 ounces of cheese
- 8 liters of cream cheese
- 1 1/2 cup whole milk
- 1 tbsp pure garlic
- 1 tablespoon Italian sauce
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 6 ounces of freshly grated Parmesan cheese
- 5 cups fried mozzarella cheese

- 16 ounces of lasagna noodles
Instructions for cooking homemade lasagna with bolognese sauce
- Chop the garlic, chop the carrots, celery and red onion.

- In a large skillet (cast iron works best for this), heat the olive oil over medium heat.

- Add the vegetables to the skillet. Sauté vegetables over low heat for 7-10 minutes until tender and moisture is reduced.

- Add ground beef, Italian sausage and tomato paste. Increase the heat to medium and start stirring with a wooden spoon. Keep stirring until the meat is fully cooked, about 10-15 minutes. Adding tomato paste and cooking it this way breaks the meat up into smaller pieces and adds more flavor to the dish.

- Get rid of most excess fat. Using lean beef (90/10 0 page 93/7) makes things easier. Plus, the lean meat makes the sauce even better.

- After the meat is cooked and drained, the tomato puree is added and the red wine is better than the broth - beef, Worcestershire sauce, balsamic vinegar and bay leaf.

- Reduce heat and simmer uncovered for 60-90 minutes, stirring occasionally. At this time, the soup should be a bit thick. Don't completely reduce the amount of liquid in the sauce, as this will help the noodles cook later.

- For the cream cheese, in a large bowl, combine all the ingredients except the mozzarella. To thin the cream, let the cheese come to room temperature before adding it. After that, you should have a nice creamy, paste-like soup. Note: Use fresh Parmigiano-Reggiano and grate it as finely as possible, the use of a fine flat grater is recommended.

- Boil the lasagna in a large saucepan for 4 minutes. The pasta should be elastic, but not fully cooked. Drain and rinse with cold water. To note. For a thicker dish, use a thicker lasagna noodle.

- Place the pasta in a shallow pan and cover with hot water. This will help keep it soft and not sticky.

- Once the sauce and pasta are done and the cheese mixture is ready, it's time to start layering the lasagna. Using a large, deep skillet (13 x 9), spread a thin layer of sauce on the bottom of the skillet. To note. Disposable aluminum pans work well because they are deeper than standard 13 x 9 pans and make cleaning much easier.

- Then spread a layer of lasagne. Typically, the pan will be slightly larger than 3 whole noodles. For better pasta coverage, cut the edge of the lasagna lengthwise to fill in the gap. A pizza cutter works well for this.
- Now add a thin layer of bolognese sauce.

- Then pour a generous amount of the cheese mixture over the bolognese sauce. Spread it well on the back of a spoon.

- Sprinkle cheese mixture with plenty of grated mozzarella cheese. To note. Shredded mozzarella, sold at Costco or Sam's Club, is an excellent value and contains enough moisture to melt well.

- Repeat steps 13-16 once.
- To make 3 layers of tagliatelle, add another layer of lasagna and drizzle with bolognese sauce. Do not add more cheese to this layer. The jar should be full now. To note. If using an aluminum pan, lift the edges to prevent splattering.

- Cover the mold tightly with aluminum foil and place it in a preheated oven at 180°C for 75 minutes. Warning: The pan will be heavy and will need to be bent to lift. Make sure the pan is properly supported when moving. To note. Place a rack one step below the middle of the oven. Use the drip pan under the lasagna to catch any leaks.

- Remove the baking sheet from the oven when the cooking time has elapsed. Increase the temperature to 425 degrees Fahrenheit and move the rack to the middle of the grill. WARNING: The fryer and grill will be very hot, be sure to wear suitable warm gloves.
- Remove the foil from the oven and top the lasagna with more shredded mozzarella cheese.

- Once the oven reaches 425 F, return the lasagna to the oven and brown the top of the cheese for 10-15 minutes. Watch the lasagna so the cheese doesn't burn.
- When the cheese is melted and golden, take it out of the oven.
