When it comes to cooking, it's important to remember that everyone starts somewhere. I don't know anyone who was born with a wooden spoon and that's it. There's a lot to learn to be a productive chef, and there's definitely room for improvement. Not only do you need to start with the basics when it comes to cooking, but you also have to start from scratch when you learn to prepare fresh foods like Chinese, Thai or Indian.
This means that at some point in the cooking cycle, someone somewhere will cook worse or better than you. Rest assured, it's best to have bad cooking days. There are many people who cook for different reasons. Some cook to eat and live, while others cook just to enjoy the cooking process. Some cook in times of emotional upheaval, others cook out of boredom. Whatever your reason for cooking or learning to cook, you should always start with the basics.
Lettuce Wrap. All of these delicious breakfast dishes and fillings can be pre-made, so it's easy to heat and roll up the filling when you're ready to eat. This is a really fun lunch to talk about with the kids and teach them that lettuce is more versatile than people think. Some opt for a teriyaki-inspired treat; My kids love the taco inspired filling because of the lettuce wrap. You are totally free to suggest a favorite date for yourself.

I added tofu to one of my standard recipes. By blending the tofu after mixing the other ingredients, the taste and texture of the tofu is preserved. Adjust the saltiness of the sauce to your taste. If it's too light for you, add more soy sauce. Bell peppers are flammable, so adjust the heat as you see them. Recipe by Fukita Nochiko
Ingredients and spices needed for meat, solid tofu and stuffed peppers:
- 5 bell peppers (small)
- 100 grams of solid tofu
- 100 grams of minced pork and beef mixture
- 1/2 onion (small, finely chopped)
- 2 tablespoons of panko
- 1 egg (large or medium)
- A pinch of salt and pepper
- 1 small nutmeg (optional)
- 1 plain flour
- 50 ml water (steamed)
- For Ankaki Japanese sauce - For 2 bell peppers
- 1 tablespoon soy sauce, mirin
- 1 teaspoon honey (or sugar)
- 2 tablespoons dashi stock (or water + dashi stock granules)
- 1/2 teaspoon katakuriko
Steps to prepare stuffed peppers with meat and tofu
- Wrap the tofu in kitchen paper, place in a heatproof bowl and microwave for 2-3 minutes. (If the microwave starts to steam, that's okay!)
- Cool the tofu briefly and drain the water. Mash with a fork and let cool completely.
- Wash the peppers, cut them in half and remove the seeds.
- Dry the peppers with a paper towel and sprinkle with flour (remove the excess).
- Combine the finely chopped onion, panko, ground beef, egg, salt, pepper and nutmeg in a bowl, mix and knead.
- Good to go when it's sticky!
- Add the grated tofu with your hands or jaw.
- Stir well to make the filling.
- Fill with pepper. The filling should form a mound on top of the peppers.
- Heat vegetable oil (not included) in a frying pan. Place peppers, meat face down, and cook over medium-high heat for about a minute.
- When it's golden, turn it over. Add 500ml of water, cover and steam for 2-3 minutes.
- Remove the lid and allow the moisture in the pan to evaporate. If the clear juice is pierced with a skewer, it means it is cooked. (If the juice is red, it means it's still raw inside!)
- For the Japanese Ankaki Sauce: Add all the sauce ingredients to the skillet after removing the stuffed peppers. When the sauce thickens, you're done. Pour over peppers and sprinkle with sesame seeds, if available.
- If you have leftover filling, shape it into a mini burger and tuck it into the bento!
- I added soy sauce to the bento slider.
