  1. Heat the oven to 180 degrees Celsius. Place the flour and sprouts in a bowl and rinse. Heat the oil in a large, heavy-bottomed flameproof saucepan over high heat. Fry the thighs in batches for 4-5 minutes or until browned. Move your hips to the side.
  2. Reduce heat to medium and heat more oil in a saucepan. Add onion and thyme. Cook for 3 to 4 minutes or until onion is soft. Add wine and pepper. Cook for 1 minute. Mix the stock, sauce and jam. Add pepper stock and bring to the boil. Cover the pot with a lid or foil and keep it in the oven.
  3. Bake for 1 hour. Remove the lid and pour the liquid into the thighs. Roast for 30 to 40 minutes or until the meat is tender and falling off the bone.
  4. Cover again and let steep for 10 minutes before serving. Serve with sour cream or polenta.
